Domaine Jean Collet et Fils, Chablis 1er Cru Vaillons 2023

The components from Epinottes, Chatains, Vaillons and Minots have just been blended. Mid lemon yellow in colour, though the bouquet is not yet in place. There is no shortage of stones, a layer of lemon meringue on top, a slight bitterness to finish. A little sunnier in fruit profile than a classic Vaillons.
