Carabinero is a large deep-sea prawn species that hails in the deepest part of the Eastern Atlantic Ocean. They are very large in size and known for their ruby red colouring that remains even after cooked. The fleshy, distinctive tail meat is divinely buttery. These distinct and somewhat rare prawns are native to Spain, the East Atlantic and Morocco. Their distinct bright red colour comes from their diet of pink plankton, which is native to their natural diet among the Spanish sea.
Carabineros come in all different sizes, however, we only carry the most premium and succulent Jumbo Red Carabineros to ensure a meaty and juicy experience within every bite.While their meat resides in the tail, their head and body should not be overlooked and are excellent for making clear and creamed soups and sauces by adding flavour and red colour. Each part of this prawn should not be wasted, and some Europeans consider the flavour of their heads as a “delicacy”.
