Tasting Note
Emmanuel Giboulot, the second generation in biodynamic winemaking since 1985, and his whole wine estate was certified in biodynamic in 1996.  Today, he produces on 12 hectares including 5.30 hectares of Côte de Beaune white from three lieux-dits: La Grande Châtelaine, Les Pierres Blanches and La Combe d’Eve.  And of course, Saint-Romain and the Hautes Côtes de Nuits, Rully Premier cru “La Pucelle”.  Emmanuel Giboulot himself has become one of the prominent figures in organic winegrowing in Burgundy.  He makes wines in purity expression, with the fruit and/or minerality expressing themselves without artifice. That is why he chooses to limit the use of wood and new barrels.

Côte de Beaune is a tiny appellation of only 33.40 hectares, one of the smallest in Burgundy – a region already famous for its diverse and often very small parcels. Not to be confused with the much larger Côte de Beaune Villages (with 3,222 hectares), the terroir is characterized by its gravelly clay-limestone soil and its old vines.

Vinification: The grapes are pressed. Cold clarification over approximately 24 hours. The clarified must ferments in large and previously used old oak vats, to preserve its purity and minerality. Ageing for 12 months on its lees.
